My ancestors settled in Château-Thébaud in 1766 near Nantes in the Loire Atlantique.

The Domain was created by my grandfather, born in 1897. He built the present house with a small adjoining cellar. One of his sons took over the Domain and I, at the age of 20, in 1984, took up the challenge ... that's life!
A history, a skill and a wine that pass from generation to generation in the Salmon family.

Our Values

The cultivation of the vines has remained traditional. The Domaine Salmon has chosen cultivation techniques which respect the environment such as natural grass-making and tillage.
The old vines with controlled yields, guarantee the excellence of an increasingly qualitative production.

We work every day in our vineyards, which allows us a rigorous and rational monitoring of the conduct of our vines and our grapes. From pruning to harvest through disbudding or thinning when necessary, we walk through our vineyard with a constant concern for the best quality and sublimation of the terroir.

At each stage of the cultivation process, winemaking, growing, bottling, storage, labeling, preparing orders and shipments, everything is meticulously carried out and checked. The raw materials used as well.

Each person is assigned to a particular position and specialises in that field. It is important to master the tricks of the trade. The team is small, everyone knows each other's work so that everyone can check the others and replace them as required, to meet tight deadlines. As for the winery, where the wine is made, the selection of plots, the choice of grape varieties and pruning methods are defined to offer true wines, marked by our style, our vineyard.

We ourselves develop, from beginning to end, our wines and we employ all our expertise throughout all of the stages:

  • Monitoring the maturity of the vines (sugars, acidity, PH of the grapes, grape tasting), which determines the very best date for the harvest
  • Carrying out the harvest in a way which respects the completeness of the grapes and fast transport to the cellar
  • Pneumatic pressing without crushing, which ensures utmost respect for the bunches of grapes
  • cold settling by gravity
  • Alcoholic fermentation with temperature control and daily monitoring
  • Maturing on lees
  • Racking
  • Bottling at the property carried out by ourselves.
  • Packaging, preparation of the orders

Once the harvest has been brought into the cellar, hygiene is rigorous and the cellar is designed to limit the manipulations of juices and thus keep the wine faithful to itself. The tastings are conducted throughout winemaking and growing, everyone participating, often with the contribution of our fathers, with their experienced tastebuds, and our children preparing for the future. 

There are many of us to grasp and ensure the character of the wines of the Domain.

The cellar is progessively transformed and equipped to be able to carry out and develop the winemaking methods that allow  the full potential of our terroir and our winemaker's passion to be fully expressed.

The development of the Domaine Salmon is accompanied by constant qualitative efforts to express all the character and authenticity of its terroir. With its current wide range appreciated by many people, Domaine Salmon can claim to be a reference for quality and expertise in our appellation. This spirit is reflected in the wines we offer and is expressed through simple, universal values of sharing, friendliness, simplicity and authenticity.
